The Lucianaz family<\/a> and their artisanal coffee <\/h2>\n\n

The Caf\u00e9 <\/strong>Ollietti<\/strong> <\/a>and the Lucianaz family<\/a><\/strong> represent a union that is now part of the history of <\/strong> coffee <\/strong>in the Aosta Valley<\/strong>, a brand that reminds us of the tropical origins of this delicious artisanal product of excellent quality<\/strong>.<\/p>\n\n

This is the story of afamily business<\/strong>.\nSince 1962 <\/strong>the Lucianaz family<\/a> <\/strong>has been carrying on the historic Valdostan brand Caff\u00e8 Ollietti<\/a> in the <\/strong>town of Charvensod<\/strong>. <\/p>\n\n

The blend <\/strong>with its intense<\/strong>, rounded <\/strong> flavor<\/strong> was created by Eugenio Lucianaz<\/a><\/strong>, the founder of the family, who carefully selected delicate qualities of Arabica coffee<\/strong> from Central America and valuable varieties of robusta coffee<\/strong>, grown instead in Central Africa.<\/p>\n\n

The artisanal roasting of Ollietti<\/a> Coffee<\/h2>\n\n

The company is now run by Paola<\/strong> and Diego<\/strong>, Eugenio’s children.<\/p>\n\n

Roasting<\/strong> is still done in the traditional way<\/strong> in an artisanal drum roasting machine<\/strong>. <\/p>\n\n

There are no electronic sensors to control the degree of roasting: it is in theartisans’ expert sense of smell<\/strong> that lies the real secret of perfect “cooking.”<\/strong>\nSimply by listening to the crunching of the beans, they know exactly when the blend is ready. <\/p>\n\n

The process<\/strong> is certainly longer<\/strong> and more laborious<\/strong> than the industrial one, but this is precisely one of the strengths of Ollietti<\/a><\/strong>‘s artisanal coffee<\/strong>: the slow roasting<\/strong> process and the small size of the machine allow for perfectly and evenly roasted beans, an essential requirement for theunmistakable aroma<\/strong> to be released when the coffee<\/strong> is brewed.<\/p>\n\n

And don’t think that the husk that comes off the beans<\/strong> during roasting <\/strong>is thrown away!<\/p>\n\n

The Lucianaz<\/a> family<\/strong> is against waste<\/strong> and there is not a single thing that is not reused during production. <\/p>\n\n

In fact, the skin of <\/strong> coffee beans<\/strong>, despite not tasting great, is rich in nutrients<\/strong> and Eugenio, instead of wasting it, uses it to fertilize <\/strong>the vineyard<\/strong>.<\/p>\n\n

The tradition of “caf\u00e9 alla valdostana”<\/h2>\n\n

Have you ever heard of the traditional “caf\u00e9 alla valdostana”?<\/strong><\/p>\n\n

Probably not: very few people now carry on this ancient tradition, even in the Aosta Valley itself.<\/p>\n\n

It is a special local drink <\/strong>invented in the mists of time to “warm the ears” together with friends on cold winter nights.<\/p>\n\n

“Valle d’Aosta style coffee” <\/strong>consists of coffee laced with grappa<\/strong>, lemon zest<\/strong>, sugar <\/strong>and plenty of spices<\/strong>.<\/p>\n\n

Preparation requires the use of an object symbolic <\/strong>ofcraftsmanship in the Aosta Valley<\/strong>, the Friendship Cup<\/strong>: this is a large, pot-bellied wooden bowl<\/strong> with handles<\/strong> to support it and characterized by the presence of spouts<\/strong> on the sides and a finely carved lid <\/strong>.<\/p>\n\n

The rim of the Friendship Cup<\/strong> should be sprinkled with sugar<\/strong> and schnapps<\/strong>.\nAfter that, a flame <\/strong>is lit on the rim and the flaming drink is served. <\/p>\n\n

At this point, the cup is ready and is passed around as a sign of friendship<\/strong>, passing it from hand to hand, without laying it on the table.\nIn this way, everyone receives their ration of “Valdostan coffee,”<\/strong> very often even more than once. <\/p>\n\n

It never happens that we always sip coffee from the same spout, but this does not turn out to be a problem, on the contrary.\nIt is precisely this that creates a stronger friendship<\/strong>, greater togetherness <\/strong>and intense involvement<\/strong> in the practice of the ritual. <\/p>\n\n
